Healthy Carrot Cake…(Made Unhealthy with Cream Cheese Icing!)

I had every intention of posting dessert last week, but I only have two weeks of maternity leave left (!!!) so I’ve been spending whatever free time my daughter allows me doing chores and running errands that I won’t have time for once I’m back at work…Therefore this week will be another double post of dessert and art.

We’ll start with dessert first this time, since that’s what last week’s post was supposed to be. A very good friend recently gave me a great recipe for some healthy, sugar-free (and easily made dairy and egg free) carrot cake. But my husband and I looove cream cheese icing and it goes so well with carrot cake, I just had to add some…making the cake not as healthy anymore, but doubly delicious!

Carrot Cake:

½ cup​​ coconut oil
2/3 cup​ maple syrup or honey (my friend and I used only 1/3 cup)
1 ½ cups​ finely grated carrots
½ cup​ ​milk (or non-dairy almond milk)
1 tbsp​​ freshly squeezed lemon juice
2 eggs (or 2 tbsp​​ ground flax seed mixed with 6 tbsp of water)
2 cups​ ​whole wheat flour
1 ½ tsp baking soda
½ tsp​​ salt
1 tsp​​ cinnamon
1 tsp​​ ginger
1 tsp​​ all spice (I didn’t have any all spice in the cupboard so I used ½ tsp of nutmeg)
½ cup​ ​chopped walnuts or pecans (optional)

Mix the dry ingredients in a bowl and set aside. Beat the eggs, then add the carrots, dry ingredients, and maple syrup. Mix in the coconut oil (make sure it’s at room temperature or soft enough to blend fully with the batter). Add the milk and lemon (and nuts). Bake at 350 F in a greased or parchment lined 8 inch pan for about 50 minutes, or until a cake tester comes out clean.

Cream Cheese Icing:

1 stick butter (at room temperature)
1 package of cream cheese (at room temperature)
1/3 cup powdered sugar (I had a little less than 1/3 cup left in the pantry and it was more than enough, I think 1/4 cup of sugar would be ample)

Simply beat the ingredients together until they’re well blended and fluffy. Eat by the spoonful or spread it on the carrot cake if you must:


This week’s drawing is very simple. Occassionally I like to make patterns which I can then colour, I find it quite relaxing. I thought this one might look interesting if I cut it up…
