I have a friend who recently developed a severe egg allergy, and her daughter is extremely sensitive to dairy, so as long as she’s nursing she will be avoiding dairy as well. We try to get together once a week for a playdate so I’ve been on the hunt for egg and dairy free dessert recipes. I looked online and found a peanut butter cookie recipe at godairyfree.org.
Here is the recipe:
1/2 cup peanut butter (I use organic 100% pure peanut butter)
1/2 tbsp ground flax seeds
1 tbsp water
1 tbsp honey
1/4 cup powdered sugar
1/4 tsp vanilla
1/4 tsp baking soda
1/3 cup chocolate chips
Mix the flax seeds with the water and let it sit for a few minutes. Add the remaining ingredients and mix in the chocolate chips last. Using a tablespoon place the batter onto baking sheets lined with parchment paper and bake at 350 F for about 8-10 minutes.
The result was surprisingly tasty, but I obviously wasn’t thinking when I made them because I used regular chocolate chips…which contain milk! So my poor friend humoured me by eating around the chocolate chips.
The following week I tried again. I perused my cookbooks until I found and egg and dairy free coconut crisp recipe in my ever handy copy of Martha Stewart’s Cookies.
Coconut Crisps:
1 cup flour
1 cup sugar
1 cup unsweetened shredded coconut
1/2 tsp nutmeg
1/4 tsp baking soda
1/4 salt
Stir together all the ingredients and add approximately 5 tablespoons of water to form a stiff dough. Shape the dough into a rectangle, wrap in plastic and refrigerate for 15 minutes. Roll the dough to 1/8 inch thick and transfer to baking sheets lined with parchment paper. Refrigerate once more for 15 minutes. Using a 2 inch round cutter, cut the dough and space the cookies at least 2 inches apart. Bake at 375 F for about 11 minutes.
I overcooked them a little, but they were still a nice light snack with a cup of tea. Only this time I forgot the cookies at home! I left the house in such a rush in the midst of the “everyone leaving for work and school mayhem” that I forgot my daughter’s diaper bag, in which I had packed the cookies. My friend had spare diapers for us but alas, no cookies. I will be seeing her again this week and this time I am going to make sure she gets some cookies!
